I had a lovely Memorial Day weekend filled with the best types of marathons. Harry Potter marathon, Disney Channel original movie marathon (Zenon <3), and of course, a cooking marathon! Okay, I guess I didn't cook that much, but it felt like it took forever. This time I made spicy honey baked cauliflower, kinpira with the cauliflower scraps, and froze 3 servings of rice.
I followed this recipe from Kirbie Cravings for their Honey Garlic Baked Cauliflower (I changed the name a bit because the spiciness stood out more than the garlic to me). I think it's clear that I did not put as much love into making this look pretty than they did, but it still turned out tasty!
As one should always do with vegetables, I used as much of the cauliflower as I could. I can't stand throwing away edible scraps! It seriously looked like I had nearly as much of the stems as I did the florets. It's lucky that I learned how to make kinpira recently because that was perfect for the stems and leaves.
I basically followed the same recipe for carrot kinpira, just without the onion. I didn't end up using the actual leaves, but I did use the wide base of the leaves, which had a texture similar to celery -- kind of stringy and crunchy. The fat, stout stem was also cut up into matchsticks.
I know I've been raving about kinpira pretty much nonstop, but it is so simple and makes everything taste so good! It's definitely turning into my go-to way to cook all those random veggie scraps :)
