Salmon pasta has been a staple in my diet for a few years now. This ridiculously simple recipe was first made for me by an old friend, who had learned it from his French friend. (French friend, if you're out there reading this, you have touched my life forever). When I first had this dish, I craved it pretty much always and would ask my friend to make it any time we hung out. Now I know how it feels, because even though Kyle almost never picks out what to eat, this is the one dish that he'll actually say, "I've been craving salmon pasta, can we do that for dinner?" I think this is all the evidence you need to know that salmon pasta is a real winner that even picky eaters love.
I went for a deconstructed version this time since I was keeping this in the fridge overnight and didn't want the basil to get all gross. To put it all together once it was time to eat, I took out the basil before heating the rest in the microwave and shredded it up with my hands. Then, I broke up the salmon with a fork and sprinkled the basil on top. Mix mix mix, aaand presto! Delicious pasta!
Again, this recipe is so easy and foolproof, mostly because you don't actually have to cook anything. You can definitely do things the long way and cook your own salmon! This just happens to be the one occasion where I prefer the pre-cooked packaged stuff :) I hope you cherish this dish as much as I do and hopefully don't get too addicted!

Ingredients:
- Echo Falls Cracked Pepper Smoked Salmon, one package (4 oz)
- Buitoni Fettuccine (refrigerated, fresh), one package (9 oz)
- Basil, 4-6 leaves
- 1/2 Avocado (optional)
- Olive Oil, 2-3 Tbsp
- Lemon Juice, 1 Tbsp or to taste
- Salt & Pepper, 2 tsp each or to taste
Directions:
- Mix olive oil, lemon juice, and salt and pepper in a medium bowl.
- Add pasta and 1 Tbsp olive oil to 4 quarts boiling water.
- Reduce heat and boil gently 2-3 minutes or until tender. (Stir frequently to prevent sticking.)
- Drain water from pasta. Add to bowl with olive oil mixture and stir to coat.
- Chop salmon, basil, and avocado into small pieces and place into bowl. (Note: Do not cut into basil more than necessary, as it can ruin the flavor. The best technique is to stack the basil leaves on top of each other and roll them up like a cigarette, then cut into strips).
- Mix together. Add additional olive oil, lemon juice, and salt and pepper to taste.
